Soft Boiled Eggs & Asparagus Wrapped in Prosciutto

Soft Boiled Eggs & Asparagus Wrapped in Prosciutto

Ingredients:
2 Large Eggs
8 Asparagus Spears
4 Slices of Prosciutto
Olive Oil

Instructions:

  1. Preheat your oven to 450°F
  2. Line a baking sheet with parchment paper
  3. Cut off the woody ends of your asparagus, and discard
  4.  Wrap each piece of asparagus in half a piece of prosciutto
  5. Lay them individually on the baking sheet
  6. Drizzle a little olive oil over the pieces
  7. Bake for 10 minutes
  8. Now it’s time to make your eggs. 
  9. Bring a large pot of water to a boil
  10. Gently lower your eggs into the water with a slotted spoon
  11. Reduce heat to a simmer and cook for 6 Minutes
  12. Remove from water with a slotted spoon
  13. Cut off the tops and serve with asparagus
