It's usually healthy, generally paleo-ish, sometimes Whole30. I will never be able to live without good cheese!

Bacon Lattice with Fried Eggs & Avocado

Ingredients:
8oz. package of Paleo Bacon
Large Eggs
Ghee
1 Avocado, sliced
Salt, Pepper, Aleppo Pepper

Roast Your Bacon

  1. Preheat your oven to 425°F
  2.  Line a baking sheet with tinfoil
  3. Make a lattice with your bacon
  4. Place in oven and roast for 25 minutes
  5. Line a plate with paper towels
  6. Remove from the oven and move your bacon to the paper towel lined plate

Fry Your Eggs:

  1. Crack your eggs into ramekins
  2. Place large non-stick skillet over medium heat
  3. Add the ghee, and evenly coat the surface of the pan
  4.  Add your eggs into the pan
  5.  Do not touch your egg, let it cook for a few minutes until the whites set
  6. Now, loosely cover your pan and lower your heat. The steam is going to finish setting your eggs
  7. Check them in 3-4 minutes
  8. As your eggs are done, slide onto your platter

Assemble:
Place the bacon lattice on a platter, top with eggs and sliced avocado. Season with salt, black pepper and/or aleppo pepper.
