Spinach Salad with Grilled Peaches & Prosciutto

Ingredients:
8oz. Baby Spinach
3oz. package of Prosciutto di Parma (read your label)
½ cup Pecans, chopped
2 Large Peaches
Olive Oil
Balsamic Vinegar
Flakey Sea Salt and Fresh Cracked Pepper

For The Grilled Peaches:

  1. Heat the grill to medium-high
  2. Brush fruit wedges with olive oil.
  3. Place one cut side on grill.
  4. Grill 2-3 minutes until grill lines form.
  5. Turn wedge to the other cut side. Grill for another 2-3 minutes.
  6. Remove from grill

Assembly:

  1. Place spinach in a large bowl
  2. Top with grilled peaches, prosciutto slices, and chopped pecans
  3. Drizzle with balsamic and season with salt and pepper
