It's usually healthy, generally paleo-ish, sometimes Whole30. I will never be able to live without good cheese!

Sweet Potato Toast Party

Sweet Potato Toast Party

Ingredients:
1/2 Purple Sweet Potato
1/2 Sweet Potato
Extra Virgin Olive Oil
Salt & Pepper
3 Avocado, scooped and smashed
Juice of 1 Lime
1 Blood Orange, supremed
Crushed Red Pepper
Pomegranate Seeds
Fresh Mint, chopped
Prosciutto
Blackberries
Fresh Lemon Zest
Trader Joe's Everything Bagel Seasoning
Fresh Chives, chopped

Instructions:
Preheat oven to 400Β°F, and line a baking sheet with parchment paper. Cut your sweet potatoes in ¼” thick slices and coat then with extra virgin olive oil on both sides. Sprinkle with salt and a pinch of pepper, bake for 30 minutes, flipping half way through. Remove from oven and set aside.

Mix smashed avocado with a bit of lime juice and distribute evenly onto the slices of sweet potato toast. Now, it's time to assemble. Top some slices with blood oranges and sprinkle with crushed red pepper. Top other with prosciutto, a blackberry, and sprinkle with fresh lemon zest. Top the some slices with pomegranate seeds and fresh chopped mint. Top the remaining slices with everything bagel sesasoning and fresh chives!
