Whole30 BLT Cups
8 Slices Paleo Bacon
¾ Cup Chopped or Shredded Lettuce
8 Cherry Tomatoes
½ Avocado, Cut Into Chunks
Compliant Ranch Dressing
Preheat your oven to 425°F and wrap a slice of bacon inside of each muffin tin. Make sure to do this with the fattier side towards the bottom of the pan. The bacon will overlap. Bake for 20 minutes, or until bacon is crispy. Remove from the oven and place rings of bacon on a paper towel lined plate.
Once cool enough to handle, place on a plate or in your to-go container and fill each with lettuce. Then top with tomato and avocado chunks. Drizzle with compliant ranch and dig in.
