Grilled Clams with Herb & Garlic Ghee
2lbs Littleneck clams, Scrubbed
1 Cup Fresh Italian Parsley, Chopped
8 Tbsp. Ghee
Crushed Red Pepper
Flakey Salt For Serving
Over medium high heat melt ghee in a small saucepan. Once warm add in the garlic and crushed red pepper to your taste. Cook for 1-2 minutes until fragrant then add in your parsley and season with a salt. Cook for another minute or two then set aside
Heat your grill to high and add your clams in a single layer. Cook for 5-10 minutes until the clams are open. Discard any unopened clams. Then toss clams with your herb and garlic ghee. Serve with a bit of flakey sea salt.
