Seared Salmon with Grilled Asparagus & Potatoes
2lbs. Salmon, Cut Into 4 Filets, Skin Removed, Room Temperature
1 Bunch Asparagus
4 Red Potatoes, cut in ¼” thick slices
2 Tbsp. Rosemary, chopped
Italian Parsley Chopped
Flakey Sea Salt
Crushed Red Pepper
Heat olive oil in a large non-stick pan over medium-high heat. Pat your salmon dry, squeeze lemon over all slices, and season with salt and pepper. When the pan is hot, add salmon bottom side up, and sear undisturbed for 4 minutes until crispy. Carefully flip salmon and sear for an additional 4 minutes or until cooked to your desired doneness.
Prepare your grill for high heat and oil your grill grate. Toss asparagus spears and with olive oil, salt and pepper, and toss potato slices with olive oil, rosemary, salt and pepper. Add potatoes and asparagus spears to the grill (asparagus on a diagonal so they don’t fall through the grate). Grill potatoes for 5-7 minutes on each side or until fork tender and crispy. Grill Asparagus for about 6 minutes, flipping half way through.
Serve with chopped parsley, crushed red pepper, and flakey sea salt!
