Oven Roasted Wings & Drumsticks with a Grapefruit and Herb Marinade
2lbs. Chicken Wings
2lbs. Chicken Legs
Kosher Salt & Pepper
½ Cup Olive Oil
1 Lg. Grapefruit, Juiced (~3/4 cup juice)
¼ Cup Pomegranate Juice (or more total juice should be 1 cup)
1 Cup Loosely Packed Fresh Oregano, Chopped
¾ Cup Loosely Packed Fresh Rosemary, Chopped
10 Large Garlic Cloves, Crushed
Grapefruit Wedges for Serving
Season wings and legs with salt and pepper and set aside. In a medium bowl combine olive oil, grapefruit juice, pomegranate juice, chopped oregano, chopped rosemary, and garlic. Whisk together until combined. Add marinade and chicken to a large plastic bag or lidded container and refrigerate 1 hour to overnight.
Preheat your oven to 400°F and place a wire rack inside a foil lined baking sheet. Place wings and legs in a single layer on the rack and bake for 45 minutes or until golden, crispy, and have an internal temperature of 165°F. Remove from the oven and serve with grapefruit wedges.
